Oatmeal Apricot Crisps

2 cups white sugar
2 eggs
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
2 cups rolled oats
1/2 cup dried apricots, chopped
1/2 cup dry roasted sunflower seeds
