Jumbo Raisin Spice Cookies

3 cups unbleached all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup unsalted butter
1 3/4 cups white sugar
1 teaspoon vanilla extract
2 eggs
2 1/2 cups raisins
2 cups salted peanuts

Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, beat butter until soft. Mix in the vanilla and sugar. Add the eggs and mix well.
